Ratatouille without tomatoes or eggplant; or, Goosh

I saw a recipe for ratatouille that sounded really good and was all set to try it until I remembered that A. I detest cooked tomatoes and B. I have never managed to actually eat an eggplant, even though I've bought a few with good intentions. So I got out a tub of frozen broth/sludge from making pot roast, threw some potatoes in it, then sauteed carrots, zucchini, yellow squash, and beans (green beans don't really sautee FYI) threw it all in together and cooked it for a long time. It's actually pretty good. I ate quite a bit of it.
